- 1 small Red Onion
- 4 buns Wholegrain Bread
- 400 grams Lean Beef Mince
- 1.5 tbsp Red Curry Paste
- 2 tbsp Coriander
- 1 medium Carrot
- 1 tbsp Mayonaise
- 120 grams Rocket
- 2 tsp olive oil

- STEP 1: Finely dice half the onion. Put 1 tsp of olive oil in the frying pan and cook the onion over a medium heat for 3-4 minutes. Place the cooked onion into a bowl and combine with mince, curry paste and the 1.5 tbsp of coriander.
- STEP 2: Form mixture into 4 patties, put 1 tsp of oil in the frying pan and cook over medium heat for 4-6 minutes each side, or until cooked to your liking.
- STEP 3: Meanwhile, finely slice remaining onion and combine with grated carrot in a small bowl. Squeeze out excess moisture and combine with remaining coriander and mayonnaise.
- STEP 4: To assemble, top each toasted bun base with mixed salad greens, beef patty and carrot coleslaw.
